It was a joy to cater for a corporate group from “Wagamama” over two days at Chaffeymoor Grange. The lovely Sarah and her team were friendly, helpful and all thoroughly enjoyed their “working break”. On the second night they were treated to jug after jug of warming Mulled Wine, a Christmas dinner fit for a King, followed by indulgent chocolate fondants and never-ending cheese!
On the first night they drank Champagne, talked work, relaxed on the beautiful furniture of Chaffeymoor Grange, before enjoying a wonderful evening of great food. Their menu was:
Deep-fried oxtail croquette, with warm sweet carrot and parsnip purees, caramelised carrots and a light Guinness jus
Confit duck leg and pheasant terrine, served with sticky Chinese five spice Victoria plum chutney and toasted Brioche slices
Smoked salmon with a fresh horseradish mayonnaise, baby green leaves and tiny fried croutons
Mushroom and garlic stuffed chicken breast on a buttery mashed potato mound, served with buttered leeks, a little confit quails leg and a glug of boozy Brandy cream
Five-spice marinated crispy pork belly with puréed, caramelised and crispy spiced apple textures, mashed potato and served with jugs on creamy Burrow Hill cider sauce
